2 tbsp vegetable oil

6 oz smoked bacon, sliced and then chopped

1 medium onion, diced

1 clove garlic, minced

1 small red bell pepper, diced

2 cans cooked and drained navy or cannellini beans (15,5oz/453g each)

2 tsp brown sugar

½ tsp sweet paprika

1 tbsp Dijon mustard

1 ½ tbsp apple cider vinegar

2 tbsp barbecue sauce

4 tbsp tomatoes ketchup

1 tsp chili powder or flakes, or to taste

salt and pepper


1 – Preheat oven to 350ºF /180ºC/moderate. Spread a thin layer of oil in a medium-sized baking dish.

2 – Heat a medium saucepan with a drizzle of vegetable oil and bacon bits and stir.

3 – When bacon begins to brown, mix in onion, garlic, the bell pepper and then stir until wilt and fragrant.

4 – Add brown sugar, paprika, mustard, vinegar, barbecue sauce, ketchup and let it boil for about one minute. Stir in the beans, the chili powder, and let them bubble for 5 minutes or so, until thickened and flavorful. Season with salt and pepper.

5 – Turn beans stew into baking dish and bake for about half an hour, until sauce thickens and caramelizes on sides.
