2cans cooked and drained navy or cannellini beans15,5oz/453g each
2tspbrown sugar
½tspsweet paprika
1tbspDijon mustard
1 ½tbspapple cider vinegar
2tbspbarbecue sauce
4tbsptomatoes ketchup
1tspchili powder or flakesor to taste
salt and pepper
Instructions
1 - Preheat oven to 350ºF /180ºC/moderate. Spread a thin layer of oil in a medium-sized baking dish.
2 - Heat a medium saucepan with a drizzle of vegetable oil and bacon bits and stir.
3 - When bacon begins to brown, mix in onion, garlic, the bell pepper and then stir until wilt and fragrant.
4 – Add brown sugar, paprika, mustard, vinegar, barbecue sauce, ketchup and let it boil for about one minute. Stir in the beans, the chili powder, and let them bubble for 5 minutes or so, until thickened and flavorful. Season with salt and pepper.
5 – Turn beans stew into baking dish and bake for about half an hour, until sauce thickens and caramelizes on sides.
