STEP 1: Prepare the marinade. In a bowl, add the olive oil, Greek yogurt, red wine vinegar, minced garlic, dried oregano, and salt. Mix until well combined.
STEP 2: In a large bowl or in a large zip lock bag, add the chicken and the marinade. Combine until all the chicken is coated in the marinade mixture. Leave in the fridge for a minimum of 30 minutes or overnight.
STEP 3: Heat your grill to medium-high heat. Coat the grill with some olive oil and start cooking the chicken. Place the chicken in the hot grill, first on one side and cook for 5 minutes. Rotate the chicken drumsticks as to cook them 5 minutes on all four sides. Juices should be clear and the internal temperature of the chicken should reach at least 170ºF-180ºF.
STEP 4: Remove from grill and leave to rest for 2-3 minutes.
STEP 5: Garnish with some fresh parsley or chives. Enjoy!
