Southern Fried Potatoes and Onions are a great side dish for any meal. They're simple to make and taste delicious. They're also a great way to use up those leftover potatoes and onions from your meals.
Over medium heat, heat oil (1/4 vegetable oil) in a cast-iron skillet or saute pan.
Cut onions and potatoes to 1/4-inch thickness.
To the hot oil, add onions and potatoes carefully. Season with pepper and salt. Add red pepper flakes and garlic powder.
Stir frequently until onions and potatoes are tender. This should take about 15 minutes. To make the potatoes and onions creamier, you can cover the skillet.
To drain the excess oil transfer to a plate lined using paper towels. (Let it dry for about 1 minute)
