Salad: 1/2 lb. cooked shrimp peeled and deveined (cut into 1/3 small pieces) 1 fresh mango diced 1 ripe avocado diced 1/2 red onion diced 0.5 lb cherry tomatoes cut in half 1/4 cup fresh cilantro chopped 2.5 oz Rocket chopped 2.5 cup Orzo/Rice cooked Dressing: 1/4 cup olive oil 2 tablespoons of fresh lime juice 1 garlic clove minced salt and pepper to taste
