1/4cupgolden breadcrumbs
1teaspoonsalt
1/2teaspoonblack pepper
2eggswhisked
1/4cupall-purpose flour

Instructions
Preheat the air fryer to 380°F (190°C) for about 3 to 5 minutes.
Slice each chicken breast horizontally through the middle, creating 4 thinner pieces in total.
Whisk the eggs in a shallow bowl. In another, mix the panko and golden breadcrumbs with the salt and black pepper. Put the flour in a third.
Dredge each piece in flour, then egg, then the crumb mixture, pressing gently so the crumbs adhere.
Place the breaded cutlets in the basket without overlapping, then spray them generously with cooking spray.
Cook at 380°F (190°C) for 23 minutes, flipping halfway through and spraying the second side, until golden and cooked through.
Remove and let rest for a couple of minutes before serving so the crust firms up.
Notes
