In a small bowl, combine the salt, dried sage, garlic powder, brown sugar, black pepper and oil into a loose paste.
Rub the paste evenly over both sides of the pork chops and leave them at room temperature for 10 minutes.
Preheat the air fryer to 380°F (190°C) for 3 to 5 minutes.
Place the chops in the basket in a single layer without overlapping and cook for 10 minutes, turning them halfway through.
Check that the thickest part reads 145°F, then rest the chops on a board for 3 to 5 minutes before slicing.
