Bread Machine Banana Bread
A soft, tall banana loaf mixed and baked entirely in the bread machine, with wet ingredients loaded first and dry on top.

Ingredients  

  • 1 cup mashed ripe banana 240 g, about 2 to 3 bananas
  • 2 large eggs room temperature
  • 1/3 cup melted butter 75 g
  • 3/4 cup sugar 150 g
  • 1 1/2 cups bread flour 190 g
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder for a taller rise

Instructions

  • Add the mashed banana, eggs, melted butter and sugar directly to the bread machine pan.
  • Add the bread flour, baking soda, baking powder and salt on top of the wet ingredients.
  • Select the Speciality, Cake or Quick Bread programme on your bread machine.
  • Press start and allow the machine to mix and bake the batter automatically.
  • When the cycle ends, check the centre with a toothpick. If it is not fully cooked, select Bake Only for another 10 minutes, or until the toothpick comes out clean.
  • Remove the loaf from the pan and cool on a wire rack for 45 to 60 minutes before slicing.

Notes

Nutrition values are an estimate. Weigh the mashed banana, as 240 g is the figure that keeps the loaf from sinking. Load the wet ingredients before the dry ones, which is the opposite order to a yeast loaf. If the toothpick is not clean at the end of the cycle, run Bake Only for another 10 minutes.
