Ingredients  

For the Dough

  • 1 cup warm milk 240 ml
  • 1 large egg
  • 3 tablespoons butter softened
  • 1/4 cup sugar 50 g
  • 1 1/2 teaspoons salt
  • 3 1/2 cups strong white bread flour 450 g
  • 2 1/4 teaspoons instant or active dry yeast use the dispenser if your machine has one

For the Cinnamon Swirl

  • 1/3 cup brown sugar 70 g
  • 1 tablespoon ground cinnamon
  • 1 egg white divided, for brushing

Instructions

  • Add the warm milk, whole egg, softened butter, sugar, and salt to the bread machine pan.
  • Add the bread flour, ensuring it fully covers the liquid.
  • Make a small well in the flour and add the yeast, or place it in the yeast dispenser if your machine has one.
  • Select the Dough cycle and press start.
  • When the dough cycle completes, remove the dough and place it onto a lightly floured surface.
  • Roll the dough into a rectangle approximately 9x14 inches.
  • Lightly whisk the egg white, then brush a thin, even layer across the entire rolled-out dough.
  • Mix the brown sugar and cinnamon together, then sprinkle evenly over the brushed dough.
  • Roll the dough tightly into a log from the short edge, pinching the seam to seal.
  • Place the rolled dough back into the bread machine pan, seam side down.
  • Brush the top of the rolled loaf with the leftover egg white for a golden, glossy crust.
  • Select Bake Only and bake for 50 to 60 minutes, or until deep golden brown.
  • Remove from the pan and cool on a wire rack for at least 45 minutes before slicing.

Notes

Nutrition values are an estimate. Cool the loaf for at least 45 minutes before slicing, as cutting it warm drags the crumb and turns it gummy. Roll the log tightly from the short edge and keep surface flour light, since both are what keep the swirl from separating.
