Ingredients

  • 1 cup warm milk 240 ml
  • 3 tablespoons softened butter
  • 1/4 cup sugar 50 g
  • 1 1/2 teaspoons salt
  • 3 1/2 cups strong white bread flour 450 g
  • 1 teaspoon ground cinnamon
  • 2 1/4 teaspoons instant or active dry yeast
  • 1 cup raisins 150 g

Instructions

  • Add the warm milk, softened butter, sugar and salt to the bread machine pan.
  • Add the bread flour and cinnamon, ensuring the flour covers the liquid.
  • Make a small well in the flour and add the yeast, or place it in the yeast dispenser if your machine has one.
  • Place the raisins into the bread machine fruit dispenser, or add them when the machine beeps during the kneading stage.
  • Select the Basic/White Bread cycle and press start.
  • Allow the machine to knead, rise, add the raisins and bake the loaf automatically.
  • When the cycle is complete, remove the loaf from the pan and cool on a wire rack for at least 45 minutes before slicing.

Notes

Nutrition values are an estimate. Add the raisins through the fruit dispenser or at the knead beep, never with the flour, or they sink to the base. Keep the yeast in a well in the flour away from the salt and liquid. Cool the loaf for at least 45 minutes before slicing, since fruit loaves hold steam.
