Chia Pudding
Thick, creamy chia pudding made with just chia seeds, milk and honey. Five minutes of prep and an overnight chill.

Ingredients  

  • 40 g chia seeds 1/4 cup
  • 240 ml milk 1 cup, any kind
  • 25 g honey 1 tablespoon + 1 teaspoon

Instructions

  • Add the chia seeds to a bowl or jar.
  • Pour in the milk.
  • Add the honey.
  • Stir well until everything is evenly combined.
  • Let sit for 5 minutes.
  • Stir again to break up any clumps.
  • Cover and refrigerate for at least 4 hours or overnight.
  • Stir before serving and enjoy cold.

Notes

Nutrition values are an estimate. This recipe is lightly sweetened, so add extra honey if you prefer a sweeter pudding. Any milk works well, including whole, semi-skimmed, almond or oat milk. The second stir after 5 minutes stops the seeds clumping at the bottom. Store covered in the fridge for up to 4 days; freezing is not recommended. Strawberries and chocolate shavings in the photos are optional toppings.
