Ingredients  

Salad

  • 12 oz short pasta rotini or penne
  • 2 cups cooked chicken diced; rotisserie works great
  • 1/2 cup bacon bits cooked and crispy
  • 1 cup frozen peas thawed
  • 1/2 cup mozzarella shredded
  • 1/4 cup Parmesan shaved

Dressing

  • 3/4 cup mayonnaise
  • 2 tbsp sour cream
  • 1 tbsp lemon juice fresh
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  • First, cook the pasta in well-salted water according to package directions. Drain and let it cool completely.

  • Next, whisk together the mayonnaise, sour cream, lemon juice, salt, and pepper in a large bowl.
  • Then add the cooled pasta, diced chicken, bacon, peas, and shredded mozzarella to the bowl.

  • After that, toss gently until everything is evenly coated in the dressing.
  • Then cover and chill for 30 minutes so the flavors meld.
  • Finally, top with shaved Parmesan and parsley just before serving.

Notes
