This classic potato salad is creamy and tangy with mayo, mustard, eggs, celery and onion. An easy make-ahead side that only gets better chilled.

Ingredients  

Salad

  • 2.5 lb Yukon Gold or red potatoes peeled and cut into bite-size chunks
  • 3 eggs hard-boiled and chopped
  • 1/2 cup celery finely diced
  • 1/4 cup onion finely diced

Dressing

  • 1 cup mayonnaise
  • 2 tbsp yellow mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  • First, place the potatoes in a large pot and cover with cold water.

  • Next, bring to a boil and cook until fork-tender, about 10 to 12 minutes, then drain and cool slightly.
  • Then hard-boil the eggs, peel, and chop them.

  • After that, whisk together the mayonnaise, mustard, apple cider vinegar, sugar, salt, and pepper in a large bowl.
  • Fold in the potatoes, eggs, celery, and onion until evenly coated.

  • Finally, chill for at least 1 hour before serving.

Notes
