Crockpot White Chicken Chili

Ingredients  

  • 1 1/2 lbs boneless skinless chicken breasts or thighs
  • 1 15 oz can white beans drained and rinsed
  • 1 15 oz can sweet corn drained
  • 1 4 oz can mild diced green chilies
  • 1 small onion diced
  • 3 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1 pinch salt and pepper to taste
  • 4 oz cream cheese cubed, at room temperature
  • 1/2 cup heavy cream or milk added at the end

Instructions

  • Place the chicken, beans, corn, green chilies, onion, broth and all the seasonings into the slow cooker.
  • Cover and cook on Low for 6 to 7 hours, or High for 3 to 4 hours, until the chicken is tender.
  • Remove the chicken, shred it with two forks, and return it to the pot.
  • Stir in the cubed cream cheese and the heavy cream or milk. Cover and let it melt for 10 to 15 minutes, then stir until smooth and creamy.
  • Season to taste and serve warm with your choice of toppings.

Notes

Nutrition values are an estimate. Add the cream cheese only in the last 15 minutes, as it splits over a long cook. Drain the tins properly, and use full fat cream cheese for a smooth finish.
