Ingredients  

  • 1 lb ground beef 80/20
  • 3/4 cup breadcrumbs
  • 1/2 cup milk
  • 1 large egg
  • 1 small onion grated
  • 1/2 cup ketchup plus extra for the topping
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet, or lightly grease a loaf pan.
  • In a large bowl, combine the ground beef, breadcrumbs, milk, egg, grated onion, ketchup, salt and pepper. Mix gently until just combined and do not overmix.

  • Shape the mixture into a loaf and place it on the baking sheet or into the prepared pan.
  • Spread a thin layer of ketchup over the top, right to the edges.

  • Bake for 55 to 60 minutes, until the internal temperature reaches 160°F (71°C).

  • Let the loaf rest for 10 minutes before slicing.

Notes

Nutrition values are an estimate. Mix the meat only until it just comes together, since overworking makes the loaf dense and springy. Pull it from the oven at 155F and let carryover heat take it to 160F while it rests for ten minutes.
