Egg White Wraps
Half a cup of egg white cooked flat in a non stick pan makes a flexible, flourless wrap for deli meat and shredded vegetables.

Ingredients  

Wraps

  • 2 1/2 cups egg whites
  • 1 tablespoon butter

Filling

  • 7 oz deli chicken, turkey or ham
  • 1 cup cabbage shredded
  • 1 cup carrot grated
  • salt and black pepper to taste
  • your favourite salad sauce to serve

Instructions

  • Heat a non stick pan over medium heat with a little of the butter, letting it coat the base without browning.

  • Pour about 1/2 cup of egg whites into the pan and tilt it immediately so the liquid runs out into a thin, even circle.
  • Cook for 1 to 2 minutes until set, then flip briefly to finish the second side.
  • Remove and repeat until you have 5 wraps, stacking them as they come off the heat.
  • Fill each wrap with deli chicken, turkey or ham, along with the shredded cabbage and grated carrot.

  • Season lightly with salt and black pepper.
  • Add your favourite salad sauce, or keep it separate for serving, then roll firmly and cut in half on the diagonal.

Notes

Nutrition values are an estimate. Keep the pan on medium and lift each wrap off while the surface still looks faintly damp, as overcooking is what makes them crack. Store the wraps and the filling separately and assemble them fresh. Stack cooked wraps with parchment between each one.
