Freezer Lasagna
Beef and tomato sauce layered raw with pasta sheets, ricotta and mozzarella, then wrapped and frozen ready to bake from solid.

Ingredients  

  • 9 lasagna sheets
  • 1 lb beef mince 500 g
  • 1 jar tomato sauce
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 cups mozzarella shredded, 250 g
  • 1 cup ricotta or cottage cheese 250 g
  • salt and black pepper to taste

Instructions

  • In a large pan, cook the beef mince with the chopped onion and minced garlic until browned all through.

  • Stir in the tomato sauce and simmer for 5 to 10 minutes, until thick enough that a spoon leaves a brief trail.

  • In a baking dish, layer sauce, then lasagna sheets, then ricotta, then mozzarella.

  • Repeat the layers until all the ingredients are used, finishing with mozzarella on top.
  • Allow the lasagna to cool slightly, then wrap it tightly with cling film followed by foil.
  • Label clearly with the date and freeze for up to 3 months.
  • To bake from frozen, bake covered at 350°F (180°C) for 60 minutes.
  • Remove the foil and bake uncovered for a further 15 to 20 minutes, until bubbling and the cheese is golden.
  • To bake from thawed, thaw overnight in the fridge and bake at 350°F (180°C) for 35 to 40 minutes. Rest for 10 minutes before cutting.

Notes

Nutrition values are an estimate. Freeze the lasagna unbaked for the freshest texture. Simmer the sauce until it thickens, as a thin sauce is the main cause of a watery lasagna. Wrap in cling film and then foil to avoid freezer burn, and label with the date. The cook time shown is for baking from frozen.
