Fresh Green Bean Casserole

Ingredients  

  • 500 g green beans trimmed, about 1 lb
  • 1 can condensed cream of mushroom soup 10.5 oz / 300 g
  • 120 ml whole milk 1/2 cup
  • 1 teaspoon Worcestershire sauce optional
  • 1/4 teaspoon black pepper
  • 100 g crispy fried onions about 1 1/2 cups

Instructions

  • Preheat the oven to 350°F (180°C) and grease a medium baking dish.
  • Bring a large pot of salted water to a boil. Add the green beans and blanch for 5 minutes, until bright green and slightly tender, then drain well.
  • In a large bowl, mix the cream of mushroom soup, milk, Worcestershire sauce if using, and black pepper until smooth.
  • Stir in the drained green beans and half of the crispy fried onions.
  • Transfer the mixture to the baking dish and spread it evenly.
  • Bake for 25 minutes, until bubbling around the edges.
  • Top with the remaining crispy fried onions and bake for a further 5 to 10 minutes, until golden and bubbling.

Notes

Nutrition values are an estimate. Blanch the beans for exactly 5 minutes and drain them thoroughly, since water clinging to the beans is the main cause of a watery casserole. Add the remaining fried onions only for the last 5 to 10 minutes so they crisp rather than burn.
