Ingredients  

Dry

  • 2 1/2 cups old-fashioned rolled oats 225 g
  • 1/2 cup crisp rice cereal 15 g
  • 1/4 cup ground flaxseed 30 g
  • 1/4 cup chopped nuts 30 g
  • 1/2 teaspoon salt 3 g
  • 1/2 cup mini chocolate chips 85 g

Wet

  • 1/2 cup honey 170 g
  • 1/2 cup creamy almond butter 120 g
  • 1/4 cup coconut oil 56 g
  • 1 teaspoon vanilla extract 5 ml

Instructions

  • Line an 8x8 inch (20x20 cm) baking pan with parchment paper, leaving an overhang for easy lifting.
  • In a large bowl, combine the rolled oats, crisp rice cereal, ground flaxseed, chopped nuts, salt and mini chocolate chips. Stir to distribute evenly.
  • In a small saucepan over medium-low heat, warm the honey, almond butter and coconut oil until fully melted and smooth. Do not boil. Remove from the heat and stir in the vanilla extract.
  • Pour the warm mixture over the dry ingredients and stir until everything is well coated.
  • Transfer to the prepared pan and press down very firmly using the back of a spoon or the bottom of a glass. Compacting tightly is key for clean slices.
  • Refrigerate for at least 2 hours, or until fully set.
  • Lift out using the parchment overhang and slice into 12 bars.

Notes

Nutrition values are an estimate. Total time includes 2 hours of chilling. Press the mixture into the pan very firmly, as loose packing is the main reason bars crumble. Do not boil the honey mixture or the bars set hard and brittle.
