Ingredients

  • 4 pounds Roma tomatoes (about 1.8 kg)
  • 1-2 tablespoons olive oil optional, for storing

Instructions

  • Wash the tomatoes. Remove the stems and any bad spots.
  • Quarter the tomatoes and add them to a blender (you will need to do this in two batches for an 8 cup blender).
  • Blend for 12 to 15 seconds or until no large chunks remain.
  • Place a fine mesh sieve over a large bowl. Pour the tomato mixture a bit at a time through the sieve, using a utensil to move it around. You want to get out as much water as possible, as this cuts way down on how long you have to cook it. This can take around 10 minutes.
  • Pour the tomato mixture from the sieve into a large saucepan and simmer on low for 1 hour 50 minutes or until it reaches the proper texture.
  • Use immediately or store for later use. Enjoy!

Notes

Nutrition values are an estimate, per tablespoon. Makes about 8.8 ounces. You will need a fine mesh sieve, a large bowl and a blender (an 8 cup blender takes two batches). The olive oil is optional: pour a little over the top to help it keep longer, and stir it in before use. Store in an airtight container in the fridge for up to 1 week. If you do not like seeds, scrape them out before blending. The strained juice can be diluted and used to water the garden. Great for canning.
