After trimming the roast, remove the skin and the top fat if needed. Then, pat dries the roast.
In a small bowl, combine the salt and pepper. On the entire pork, rub the seasoning.
Set the Instant Pot to saute, then add the cooking oil. Place the pork into the pot once the oil is hot and sear until both sides are browned. Once done, turn the Instant Pot off and set the roast aside.
To the pot, pour in the water along with the whisky. Scrape the bottom of the pot to release the browned bits, then return the pork roast to the pot.
Put the lid on and lock the lid, then the valve to seal. Push on the pressure cooker, setting the timer to 45 minutes.
Allow natural release of pressure for 45 minutes once done, then manually release the rest of the pressure.
For the gravy, begin by skimming the excess oil from the top of the broth in the Instant Pot. Create a slurry by whisking the cornstarch in cold water. Set the Instant Pot to saute. Stir in the cornstarch once the liquid is boiling until the gravy has thickened.
To serve, slice the roast and drizzle the gravy on top. Enjoy the pot roast with your favorite side dishes.
Notes
1. If using a smaller roast, decrease the cooking time accordingly (15
minutes/pound).
2. To prevent the gravy from getting too hot and burning, do not leave the
saute mode on for too long.
