Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts (680g), cut into chunks if you like
  • 1 tsp salt (5g)
  • 1/2 tsp black pepper (2g)
  • 1 tbsp olive oil (15g)
  • 2 cloves garlic minced (10g)
  • 1/3 cup sun-dried tomatoes chopped (85g)
  • 1 cup chicken broth (240ml)
  • 1 cup heavy cream (240ml)
  • 1/2 cup grated Parmesan cheese (50g)
  • 1 tsp Italian seasoning (3g)
  • 1/4 cup fresh basil chopped (10g)

Instructions

  • Season the chicken with the salt and pepper. I cut it into bite-size chunks first.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Sear the chicken for 4 to 5 minutes per side until golden brown.
Four step photos: diced raw breast in a bowl, seasoned with salt and pepper, added to the hot pan, then seared golden
  • Transfer the chicken to a plate.
  • Add the garlic and sun-dried tomatoes to the skillet and cook for 1 minute.
  • Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.
  • Stir in the heavy cream, Parmesan cheese, and Italian seasoning.
Four step photos: garlic and sun-dried tomatoes in the pan, broth poured in, cream added, then Parmesan scattered over
  • Return the chicken to the skillet.
  • Cover and simmer for 10 to 15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Four step photos: Italian seasoning sprinkled in, seared pieces returned to the pan, simmering, then the thickened sauce
  • Sprinkle with the fresh basil.
  • Serve immediately.

Notes

Nutrition values are an estimate. I cut the chicken breasts into bite-size chunks before searing; whole breasts work too and need the longer simmer time. Serve with pasta, mashed potatoes, rice, or crusty bread to soak up the creamy sauce. Freeze for up to 2 months and thaw overnight in the refrigerator before reheating.
