First, preheat the Ninja Woodfire Grill to the Smoke setting at 375°F (190°C) and add wood pellets. Pat the chicken thighs dry with paper towel.
Next, rub the thighs with oil, then mix the salt, pepper, smoked paprika, garlic powder, onion powder, and thyme and coat every piece evenly.
Then, place the thighs skin-side up on the grate in a single layer. Do not flip them.
Smoke at 375°F for about 30 minutes, until the internal temperature reaches 175°F to 195°F at the thickest part, away from the bone.
Optional: brush lightly with BBQ sauce in the last 1 to 2 minutes for a sticky glaze.
Finally, rest the thighs for 5 minutes before serving so the juices settle.
