Then place the chicken breast-side up on the grill plates and smoke at 230°F for about 95 minutes, checking around the 50-minute mark. Do not flip it.
After that, check that the breast reads 165°F (74°C) and the thigh 175°F to 185°F (80°C to 85°C).
Finally, brush lightly with BBQ sauce, switch to Grill mode for about 2 minutes to crisp the skin, then rest 10 minutes before carving.
