Ingredients  

  • 1 lb ground beef 450 g
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 cup pumpkin puree 240 g, plain and unsweetened
  • 1 can tomato sauce 15 oz / 425 g
  • 2 tbsp chili seasoning

Instructions

  • In a large pot over medium heat, brown the ground beef with the onion and garlic until fully cooked. Drain the excess grease.
  • Stir in the pumpkin puree, tomato sauce and chili seasoning.
  • Bring to a gentle simmer.
  • Cover and cook for 30 to 35 minutes, stirring occasionally, until thickened.
  • Taste and adjust the seasoning, then serve hot with your chosen toppings.

Notes

Nutrition values are an estimate. Use plain pumpkin puree and never pie filling, which is sweetened and spiced for dessert. Drain the beef fat properly, since there is no stock here to carry it, and keep the lid on so the pot thickens rather than reduces.
