Ingredients  

  • 1 pound fresh okra 450 g, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil 30 ml
  • 1/2 small onion 75 g, finely diced
  • 2 cloves garlic minced
  • 1/2 teaspoon red pepper flakes or to taste
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice or apple cider vinegar

Instructions

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the diced onion and cook for 3 to 4 minutes until softened.

  • Stir in the garlic and red pepper flakes and cook for 30 seconds until fragrant.
  • Add the sliced okra in a single layer. Cook without stirring for 3 to 4 minutes to help reduce moisture.
  • Stir and continue cooking for another 5 to 7 minutes, until lightly browned and tender.
  • Season with the salt and black pepper.
  • Remove from the heat and drizzle with the lemon juice or vinegar.

Notes
