Ingredients  

  • 5 oz 140g fresh baby spinach
  • 1 tbsp lemon juice
  • 3 tbsp olive oil
  • 1/3 cup grated parmesan or romano cheese
  • 1/3 cup diced walnuts
  • Salt
  • Fresh ground black pepper

Instructions

  • STEP 1: Roughly chop the walnuts with a knife.
  • STEP 2: Heat a medium size pan over medium-high heat and add the walnut chunks. Toast for 4-5 minutes until slightly browned on edged. Remove and allow to cool.
  • STEP 3: In a small bowl, mix the lemon juice, olive oil, salt, and fresh ground pepper. Stir until combined.
  • STEP 4: Clean and dry the spinach. Add to a large bowl.
  • STEP 5: Add the olive oil/lemon mix, the toasted walnuts, and parmesan cheese (remember to leave some aside for decorating). Toss until well combined.
  • STEP 6: Serve and decorate with the leftover walnuts, parmesan cheese, and some lemon slices. Enjoy!

Notes

if you’re out of walnuts substitute for almonds or pecans (whatever you have at hand).
