STEP 2: Heat a medium size pan over medium-high heat and add the walnut chunks. Toast for 4-5 minutes until slightly browned on edged. Remove and allow to cool.
STEP 3: In a small bowl, mix the lemon juice, olive oil, salt, and fresh ground pepper. Stir until combined.
STEP 4: Clean and dry the spinach. Add to a large bowl.
STEP 5: Add the olive oil/lemon mix, the toasted walnuts, and parmesan cheese (remember to leave some aside for decorating). Toss until well combined.
STEP 6: Serve and decorate with the leftover walnuts, parmesan cheese, and some lemon slices. Enjoy!
Notes
if you’re out of walnuts substitute for almonds or pecans (whatever you have at hand).
