  • 6 ounces bacon chopped (180 g)
  • 1 pound chicken breast diced (450 g)
  • 1 pound baby potatoes halved (450 g)

  • 1/2 cup chicken stock 120 ml
  • 1 1/2 cups shredded cheddar cheese 170 g
  • 2 tablespoons green onions sliced (20 g)

Instructions

  • Cook the bacon in a large skillet until the fat renders and it is cooked through, or crispy if you prefer.
Rashers sizzling in a cast iron pan, then diced breast pieces browning in the fat
  • Remove the bacon and set aside.
  • Add the chicken to the bacon fat and cook until lightly golden.
  • Add the potatoes and ranch seasoning.
Halved baby potatoes on the browned pieces with seasoning and stock, then the rashers stirred back in
  • Pour in the chicken stock.
  • Cover and cook for 15 to 20 minutes, or until the potatoes are tender.
  • Stir the bacon back into the skillet.
  • Sprinkle with the cheddar cheese.
Shredded cheddar melting over the pan and sliced green onions scattered on top
  • Cover until the cheese melts.
  • Finish with green onions before serving.

Notes

Nutrition values are an estimate. Cut larger potatoes into smaller pieces to ensure even cooking. Chicken breast is cooked at 165°F (74°C). Turkey bacon works if preferred; rotisserie chicken can be stirred in near the end just to heat through. Monterey Jack or Colby Jack can replace the cheddar. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 2 months.
