Place the chicken breasts into the slow cooker in a single layer.
In a small bowl, mix together the garlic, honey, soy sauce, water and vinegar.
Pour the sauce over the chicken, tilting the pot so it runs underneath as well.
Cover and cook on LOW for 4 to 6 hours, or HIGH for 2 to 3 hours, until the chicken is tender and fully cooked.
Carefully remove the chicken and set it aside.
For a thicker sauce, mix the cornstarch with a little cold water, stir it into the pot and cook for another 10 to 15 minutes until thickened.
Slice the chicken and return it to the sauce, or serve with the sauce spooned over the top.
Notes
