Slow Cooker Honey Garlic Chicken
Sticky, glossy honey garlic chicken cooked gently in the slow cooker, then sliced back into its own thickened sauce.

Ingredients  

  • 2 lbs chicken breasts 4 to 5 large
  • 4 cloves garlic minced
  • 1/3 cup honey
  • 1/4 cup soy sauce or coconut aminos
  • 2 tablespoons water
  • 1 tablespoon vinegar
  • 1 teaspoon cornstarch optional, for thickening

Instructions

  • Place the chicken breasts into the slow cooker in a single layer.
  • In a small bowl, mix together the garlic, honey, soy sauce, water and vinegar.
  • Pour the sauce over the chicken, tilting the pot so it runs underneath as well.
  • Cover and cook on LOW for 4 to 6 hours, or HIGH for 2 to 3 hours, until the chicken is tender and fully cooked.
  • Carefully remove the chicken and set it aside.
  • For a thicker sauce, mix the cornstarch with a little cold water, stir it into the pot and cook for another 10 to 15 minutes until thickened.
  • Slice the chicken and return it to the sauce, or serve with the sauce spooned over the top.

Notes

Nutrition values are an estimate. Do not add extra liquid, as nothing evaporates under the lid. Slake the cornstarch in cold water before stirring it in, and check breast meat early if you are cooking on HIGH.
