Cut the chicken into bite sized pieces and add them to the slow cooker in an even layer.
In a bowl, mix together the soy sauce, honey, garlic, ginger if using, and water.
Pour the sauce over the chicken and turn everything once so each piece is coated.
Cover and cook on LOW for 4 to 5 hours, until the chicken is tender and cooked through.
Remove the chicken and slice or leave in pieces.
If desired, mix the cornstarch with a little cold water, stir it into the sauce and cook for 10 to 15 minutes until thickened.
Spoon the sauce over the chicken and top with sesame seeds and sliced spring onions.
