Ingredients  

Slaw

  • 4 cups shredded green cabbage about 1/2 head, or a 14-oz bag of coleslaw mix
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots

Dressing

  • 3/4 cup mayonnaise
  • 2 tbsp granulated sugar adjust to taste
  • 2 tbsp apple cider vinegar
  • 1 tbsp lemon juice fresh
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • First, add the green cabbage, red cabbage, and shredded carrots to a large bowl and toss to combine.

  • Next, in a separate bowl whisk together the mayonnaise, sugar, apple cider vinegar, lemon juice, salt, and pepper until smooth.

  • Then pour the dressing over the cabbage mixture.

  • After that, toss everything together until the slaw is evenly coated.
  • Finally, cover and chill for at least 30 minutes before serving. Toss again just before serving.

Notes

Nutrition values are an estimate. To keep it from getting watery when made ahead, salt the shredded cabbage in a colander for an hour, then rinse and pat dry. Keeps 3 to 4 days; does not freeze.
