Gluten Free Banana Bread
A moist, tender gluten free banana loaf made in one bowl with three very ripe bananas.

Ingredients  

  • 3 ripe bananas about 350 g mashed
  • 2 eggs room temperature
  • 1/3 cup melted butter 75 g
  • 1/2 cup sugar 100 g
  • 1 teaspoon vanilla extract 5 ml
  • 1 1/2 cups gluten free flour 180 g, blend with xanthan gum
  • 1 teaspoon baking soda 5 g
  • 1/2 teaspoon salt 3 g

Instructions

  • Preheat the oven to 350°F (180°C).
  • Grease a loaf tin or line it with parchment paper.
  • In a bowl, mash the bananas until smooth.
  • Add the eggs, melted butter, sugar and vanilla extract. Mix until well combined.
  • In another bowl, mix the gluten free flour, baking soda and salt.
  • Stir the dry ingredients into the banana mixture until just combined. Do not overmix.
  • Pour the batter into the prepared loaf tin.
  • Bake for 50 to 55 minutes, or until a toothpick inserted in the centre comes out clean.
  • Cool in the pan for 10 minutes, then transfer to a wire rack and cool completely before slicing.

Notes

Nutrition values are an estimate. Use a cup-for-cup gluten free blend containing xanthan gum, or add 1/4 teaspoon. Do not overmix, and cool the loaf completely before slicing or the centre will be gummy.
