Instructions
Preheat the oven to 350°F (180°C).
Grease a loaf tin or line it with parchment paper.
In a bowl, mash the bananas until smooth.
Add the eggs, melted butter, sugar and vanilla extract. Mix until well combined.
In another bowl, mix the gluten free flour, baking soda and salt.
Stir the dry ingredients into the banana mixture until just combined. Do not overmix.
Pour the batter into the prepared loaf tin.
Bake for 50 to 55 minutes, or until a toothpick inserted in the centre comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack and cool completely before slicing.
