Homemade Doner Kebab
Spiced ground lamb rolled flat in parchment, coiled into a log and baked, then torn into pieces and broiled until the edges crisp.

Ingredients  

  • 1 1/2 lbs ground mutton or lamb 680 g
  • 1 small onion finely grated
  • 3 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • parchment paper two sheets

Instructions

  • Preheat the oven to 400°F.
  • In a large bowl, combine the ground meat, grated onion, garlic, spices, salt and olive oil.
  • Mix thoroughly until the mixture is well combined and slightly sticky.
  • Place the meat mixture onto a sheet of parchment paper, then lay another sheet of parchment on top.
  • Use a rolling pin to roll the meat into a thin, even rectangle.
  • Remove the top sheet of parchment paper.
  • Carefully roll the meat tightly into a log shape, using the bottom sheet of parchment to help.
  • Transfer the rolled meat onto a baking tray.
  • Bake for 20 minutes, until cooked through.
  • Remove from the oven and carefully collect the juices from the tray. Set aside.
  • Tear or slice the meat into doner-style pieces.
  • Spread the pieces out on the tray.
  • Drizzle the reserved juices over the meat.
  • Place under the broiler for 5 to 8 minutes, turning as needed, until the edges are slightly crispy but not dry.
  • Remove and serve immediately.

Notes

Nutrition values are an estimate. Use ground meat with a decent fat content, since very lean mince gives dry shards rather than tender sheets. Keep the reserved pan juices and drizzle them over before broiling. Watch the broiler closely, as five minutes is right and ten is jerky.
