Ingredients  

Chicken

  • 1.3 lb chicken thighs or breast cut into bite-sized pieces, 600 g

Marinade

  • 1 cup milk 240 ml
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Coating

  • 1 2/3 cups plain flour 200 g
  • 1 teaspoon salt
  • 3/4 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Frying

  • neutral oil for frying

Instructions

  • In a bowl, mix the milk, salt and black pepper. Add the chicken and marinate for at least 30 minutes.

  • In a separate bowl, combine the flour, salt, black pepper, garlic powder and onion powder.
  • Remove the chicken from the marinade and coat each piece thoroughly in the flour mixture, pressing the coating on firmly for extra crispiness.

  • Heat the oil to 350°F (175°C).
  • Fry the chicken in batches for 4 to 6 minutes, until golden, crispy and cooked through.

  • Transfer to a wire rack or a paper towel lined tray and salt immediately before serving.

Notes

Nutrition values are an estimate. Marinate for at least 30 minutes, which is not included in the total time. Press the flour coating firmly onto the chicken and rest the coated pieces for 5 minutes before frying. Keep the oil at 350°F (175°C) and fry in batches, as crowding the pan makes the coating greasy. Drain on a wire rack rather than paper.
