Ingredients  

  • 3 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 1/2 tablespoons baking powder
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 3 cups buttermilk or 3 cups milk plus 1 1/2 tablespoons lemon juice
  • 3 large eggs
  • 6 tablespoons unsalted butter melted and slightly cooled
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cup mini chocolate chips, blueberries or diced strawberries optional

Instructions

  • Preheat the oven to 400°F (200°C). Line a half sheet pan (41 x 28.8 cm) with parchment paper and grease it lightly.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.

  • In a separate bowl, whisk the buttermilk, eggs, melted butter and vanilla until combined.

  • Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix.

  • Pour the batter into the prepared pan and spread it evenly into the corners. Scatter over the toppings if using, then bake for 15 to 18 minutes, until golden and set in the centre.

Notes
