Crockpot Lasagna (No Boil Noodles, Classic Meat Sauce)

by Profile photo of BityBity

This crockpot lasagna gives you all the comfort of a classic Sunday lasagna, with rich meat sauce, creamy ricotta and a bubbling mozzarella top, but the slow cooker does the baking. The sheets go in uncooked, so there is no pot of boiling water and no oven heating up the kitchen.

In short, crockpot lasagna is a beef and marinara meat sauce, uncooked dried lasagna sheets, a ricotta, egg and Parmesan mixture and mozzarella layered three times in a slow cooker and cooked on Low for 4 to 5 hours. The sheets soften in the sauce with no boiling, and it takes about 5 1/4 hours in total, including 25 minutes of prep and a 15 to 20 minute rest. It serves 8 at about 460 calories per serving.

I first made it for a friend’s moving day, assembled at breakfast and carried over in the pot with a tea towel wrapped round the lid. By lunchtime the whole flat smelled of garlic and tomato, and we ate it standing up among the boxes. Ever since, it has been my go-to when I need a big, generous dinner without hovering over it.

Why You’ll Love This Crockpot Lasagna

  • No boiling the noodles. Dried sheets soften slowly in the sauce as it cooks.
  • Hands off for hours. Once it is layered, you can leave it alone for 4 to 5 hours.
  • Keeps the kitchen cool. In fact, it is the lasagna I make in summer, when the oven feels like a punishment.
  • Feeds eight. Perfect for family dinners, potlucks and new parents.
  • Proper layers. Meat sauce, pasta, ricotta and mozzarella, three times over, just like the baked kind.

Ingredient Notes

  • Beef mince. 500 g (1 pound). Choose fresh, bright mince and brown it well; Cleveland Clinic has a handy guide on how to tell if ground beef has gone off.
  • Onion and garlic. One small onion, finely diced, and three cloves of garlic, minced.
  • Marinara sauce. 700 g (24 ounces). This is both flavour and the liquid that cooks the pasta, so do not reduce it.
  • Tomato paste. Two tablespoons (30 g) for depth and a richer red colour.
  • Seasoning. One teaspoon of Italian seasoning, half a teaspoon of salt and a quarter teaspoon of black pepper.
  • Ricotta, egg and Parmesan. 250 g (1 cup) of ricotta, one large egg and half a cup (50 g) of grated Parmesan. The egg sets the cheese layer so it slices rather than oozes. If you are weighing up full fat against lighter dairy, Harvard’s Nutrition Source looks at the evidence on dairy.
  • Lasagna sheets. Nine regular dried sheets, uncooked. You will break them to fit.
  • Mozzarella. Two cups (225 g), shredded, for the gooey layers and the golden top.

Should You Cook Crockpot Lasagna on High or Low?

Low, every time: crockpot lasagna cooks best on Low for 4 to 5 hours. A gentle heat lets the pasta drink up the sauce evenly, while High tends to scorch the edges before the middle is tender. Here is a quick guide:

Setting Time Result
Low 4 to 5 hours Tender pasta, set layers, soft golden edges
High About 2 1/2 to 3 hours Faster, but watch for dark, crusty sides
Keep warm Up to 1 hour after cooking Fine for serving at a party

Most 6 quart oval slow cookers fit this amount perfectly. A smaller round pot works too, although the layers will be deeper and may need the full 5 hours.

How Many Layers Should You Make?

Three layers are ideal for a slow cooker lasagna. Each layer goes meat sauce, pasta sheets, a third of the ricotta mixture, then mozzarella, and you finish with the last of the sauce and cheese on top. More layers means thinner sauce between them, so the top sheets can stay firm.

How To Make Crockpot Lasagna

1. Heat the skillet. First, set a large skillet over medium high heat.

2. Brown the beef. Next, cook the beef mince until browned, breaking it up as it goes.

3. Soften the onion. Add the onion and cook until soft and translucent.

4. Add the garlic. Then stir in the garlic and cook for 30 seconds.

5. Build the sauce. After that, add the marinara, tomato paste, Italian seasoning, salt and pepper.

6. Simmer. Let it bubble gently for 5 minutes.

7. Mix the cheese layer. Meanwhile, stir the ricotta, egg and Parmesan together in a bowl.

8. Grease the pot. Lightly grease the slow cooker insert.

9. Start with sauce. Spread a thin layer of meat sauce over the bottom.

10. Add pasta. Lay sheets over the sauce, breaking them as needed to fit the shape of your pot.

11. Add ricotta. Spread over one third of the ricotta mixture.

12. Add mozzarella. Then sprinkle with mozzarella.

13. Repeat. Repeat the layers until everything is used, finishing with sauce and a generous blanket of mozzarella.

14. Slow cook. Cover and cook on Low for 4 to 5 hours, until the pasta is tender and the layers are set.

15. Rest and serve. Finally, switch it off, take the lid off and rest it for 15 to 20 minutes. I like a little extra grated Parmesan and a basil leaf on each portion, just like the photos.

Why Is My Lasagna Watery, Crunchy or Burnt?

Slow cooker lasagna turns watery when it is sliced without resting, crunchy when the top sheets are not covered in sauce, and burnt at the edges when it cooks on High. Rest it for 15 to 20 minutes, finish with sauce and cheese on top, and cook on Low. In more detail:

  • Watery. It was served too soon. Resting lets the layers firm up and soak up the loose sauce.
  • Crunchy pasta on top. The top sheets were not covered. Always finish with sauce, then cheese.
  • Burnt edges. Slow cookers run hot at the sides, especially on High. Use Low, and grease the insert well.
  • Stuck to the pot. Next time, line it with a strip of baking paper as a sling, so you can lift it out.
  • Soggy middle. Condensation drips from the lid. Lay a clean tea towel under the lid for the last hour to catch it.

If scrubbing baked on cheese from the insert is the bit you dread, a slow cooker liner keeps those crusty edges off the pot altogether.

Tips for the Best Crockpot Lasagna

  • Brown the beef and onion together until really caramelised. That flavour carries through every layer.
  • Break the sheets rather than overlapping them a lot; thick overlaps stay firm.
  • Keep the lid closed. Each peek adds roughly 15 minutes.
  • Rest before slicing. Honestly, a rested crockpot lasagna is so much easier to serve.
  • Serve with a big spoon and a flat spatula, because the first piece is never the prettiest.

Storage and Reheating

  • Fridge. Keep leftover crockpot lasagna in an airtight container for up to 4 days.
  • Reheating. Reheat individual portions in the microwave until heated through, with a teaspoon of water over the top.
  • Freezing. Allow it to cool completely, then freeze whole or in portions for up to 3 months.
  • Thawing. Thaw frozen crockpot lasagna overnight in the refrigerator before reheating.
  • Assemble ahead. You can layer it the night before and keep the insert in the fridge, then add 30 minutes to the cooking time.

Variations and Substitutions

  • Cottage cheese. It can be swapped for ricotta, cup for cup.
  • Different meat. Ground turkey, chicken, pork or Italian sausage can all replace the beef.
  • Add vegetables. Spinach, mushrooms or courgette slices between layers are lovely; squeeze spinach dry first.
  • Short on time? My one pan skillet lasagna is on the table in 40 minutes.
  • Cooking for the freezer? My freezer lasagna is built raw and baked straight from frozen.

What to Serve With Crockpot Lasagna

Garlic bread is the classic, and soft sourdough dinner rolls are lovely for mopping up the sauce. A crisp green salad or a Caesar salad cuts through all that cheese.

Roasted vegetables work well too, especially broccoli or green beans. And if you are feeding a crowd from slow cookers, my crockpot white chicken chili makes a cosy second pot.

Frequently Asked Questions

Layers and Cooking

Do lasagna noodles need to be cooked before going in the crockpot?

No. Nine regular dried sheets go in uncooked and soften in the marinara as the lasagna cooks on Low for 4 to 5 hours, so there is no pot of boiling water.

How do you know when crockpot lasagna is done?

When the pasta is tender and the layers are set, usually after 4 to 5 hours on Low. A knife should slide through the centre with no resistance. Then rest it, lid off, for 15 to 20 minutes.

Do you need to add water to crockpot lasagna?

No. The 700 g (24 ounces) of marinara gives enough liquid to cook the pasta, so extra water would only make it soupy.

Can I use oven-ready lasagna sheets in a slow cooker?

Yes. Oven-ready sheets cook a little faster, so start checking after about 3 1/2 hours on Low rather than 4 to 5 hours.

Swaps and Planning

Can I use cottage cheese instead of ricotta in crockpot lasagna?

Yes, cup for cup. Use 250 g (1 cup) of cottage cheese in place of the ricotta and mix it with the egg and Parmesan as usual.

Can I assemble crockpot lasagna ahead of time?

Yes. Layer it the night before, keep the covered insert in the fridge, then add 30 minutes to the cooking time.

What other meat can I use in slow cooker lasagna?

Ground turkey, chicken, pork or Italian sausage can all replace the 500 g (1 pound) of beef mince. Brown it well with the onion first, as you would the beef.

What should I serve with slow cooker lasagna?

Garlic bread is the classic. A crisp green or Caesar salad cuts through the cheese, and roasted broccoli or green beans also pair beautifully.

How long does crockpot lasagna last in the fridge?

Up to 4 days in an airtight container. Refrigerate leftovers within 2 hours and reheat portions in the microwave with a teaspoon of water until hot all the way through, 165°F (74°C).

Can you freeze crockpot lasagna?

Yes, for up to 3 months. Cool it completely, freeze it whole or in portions, then thaw overnight in the fridge before reheating.

Notes

Nutrition values are an estimate. Breaking the lasagna sheets to fit the shape of your slow cooker is completely normal and helps create even layers. Allowing the lasagna to rest before slicing makes serving much easier. Reheat individual portions in the microwave until heated through. Allow to cool completely before freezing; freeze whole or in portions for up to 3 months and thaw overnight in the refrigerator before reheating.
