I don’t know about you but I love salads. I try to have one in every meal. However, sometimes meals call for a really simple salad and this is my absolute favorite one.
Baby spinach is light in taste and deliciously fresh making the best salad base. Toasted walnuts add another layer of flavor and of crunch. The parmesan cheese gives it that extra sophisticated touch. Just add a really nice olive oil, a dash of lemon juice, salt, and fresh ground pepper and you’re good to go. This is simply the best spinach salad.
Tip: if you’re out of walnuts substitute for almonds or pecans (whatever you have at hand).
How to Make This Simple Spinach Salad?
STEP 1: Roughly chop the walnuts with a knife.
STEP 2: Heat a medium size pan over medium-high heat and add the walnut chunks. Toast for 4-5 minutes until slightly browned on edged. Remove and allow to cool.
STEP 3: In a small bowl, mix the lemon juice, olive oil, salt, and fresh ground pepper. Stir until combined.
STEP 4: Clean and dry the spinach. Add to a large bowl.
STEP 4: Add the olive oil/lemon mix, the toasted walnuts, and parmesan cheese (remember to leave some aside for decorating). Toss until well combined.
STEP 5: Serve and decorate with the leftover walnuts, parmesan cheese, and with some lemon slices. Enjoy!
